Bok Choy, Bok Choy, Bok Choy … MUSHROOM!

When I get an H Mart trip I can’t resist buying more vegetables than I should! This mix of mushrooms and Bok Choi comes together so easily. Just neutral oil, salt, and gochugaru was so easy and delicious! I love roasted vegetable season because I find them so much more satisfying than salads or other raw vegetables. Another fun recent one. Potato roasted with carrots, radish, and asparagus. With some olives and lemon. I really love how awesome and easy and healthy these choices are.

Reduce, reuse, recycle?

Food prices have been soaring. I recently splurged on a duck breast and made a lovely meal for a Sunday night dinner.

We could not actually eat all the meat so then I had to come up with something else. The easiest weeknight meal. I promise I’m not dangerous but I do have a number of carcasses in my freezer. I made some chicken congee earlier this week but it needed a bit more meat. Enter duck broth with a frozen Peking duck carcass and the leftover duck meat. Even leftover congee can be more leftovers!
